What happens is the car is cold, you excrete moisture through breath etc.. the car warms up and all that moisture stay inside car because the air is warm and dry. As a fellow Floridian I have to say it's completely unsurprising that our crazy humidity would lead to condensation. Not running the AC means some days the humidity in your car could easily be around 80%. The carpets and seats can retain some of that moisture and release it in a shut car.
